It is worth watching the monthly video of the latest Power BI Desktop at the official Power BI blog.
SQL BI (Alberto Ferrari and Marco Russo) produce great tutorial videos, articles and more. Start at Videos - SQLBI. They also offer free introductions to data modelling (using Power BI) and DAX courses.
Adam Saxton and Patrick Leblanc are the “Guys in a Cube”, and produce YouTube videos from a more technical perspective https://guyinacube.com/

The Star Schema book by Christopher Adamson here describes well the deign of dimension models - I can highly recommend this book.

The sqlbits conferences happens about once a year - each time in a different part of the UK. It is a very popular conference, community run and very cheaply priced compared to commercial training. Despite its name, which is a hangover from its roots as a conference for databases, it hosts quite a few talks on analytics and Power BI.
A very good book on DAX is Beginning DAX with Power BI by Philip Seamark
